Honey crystalizes in time, it becomes “set” and hardens its texture. This process is reversible. The melting point of crystallized honey is between 40 and 50 °C (104 and 122 °F), depending on its composition. Below this temperature, honey can be either in a metastable state, meaning that it will not crystallize until a seed crystal is added, or, more often, it is in a “labile” state, being saturated with enough sugars to crystallize spontaneously. The easiest and best way to melt your honey is to put the container with honey into a bowl with water and put it on the stove at lowest level. It is important not to boil the water as you can lose some of the benefits of the honey.
Benefits of wildflower honey vary here are some of them: cough suppressant, antioxidant, seasonal allergies. In past honey has been used as natural medicine.
